At Sens, we build specials around one ingredient—not a long list. One strong idea creates a cleaner drink and a clearer reason to order it.
Step one: choose the anchor
We start with a single anchor ingredient:
citrus (yuzu, orange, lemon)
spice (cardamom, cinnamon)
fruit (berry, stone fruit)
herbal notes (mint, rosemary—used carefully)
The anchor sets the direction. Everything else supports it.
Step two: decide the coffee base
Not every coffee works with every flavor. We choose the base based on what the ingredient needs:
espresso for intensity and contrast
filter for clarity and aromatic lift
cold/iced formats for brightness
This is where the drink becomes intentional rather than “coffee plus syrup.”
Step three: balance sweetness, acidity, and texture
Seasonal drinks fail when they’re too sweet or too loud. We build balance:
sweetness should support, not dominate
acidity should feel refreshing, not sour
texture should match the vibe (silky, sparkling, or clean)
Sometimes a small amount of something is enough. If you can taste the coffee and the ingredient clearly, the drink works.
